Mi Comida Loca (My Crazy Food)
Sorry guys I know its been a while but I have been pretty busy these days, but then again does anyone even read my blog? I guess this is for me and hopefully people will soon be reading these.
So lately I have been trying to eat lean lean lean and clean lol I have found my new found loves for Chia seeds, QUINOA, lean meats, coconut milk, African mango extract, gnc lean shake, and of course but it has been with me for a while... Greek yogurt! Not only do I love to eat these things on there own I also love to incorporate them into every day meals.
Instead of sour cream I've been using Greek yogurt I promise you ll never tell the difference!
I will be making more recipes with these products and more clean eating recipes.. Not that my past recipes are not healthy they totally are but I'm saying clean and very delicious!
So I do have a pretty good recipe today and its kinda made up, let me just start by saying that I hate hate hate to waste anything especially food because I always think how there are so many people in need! So late night i made a very lean steak dinner with a side of quinoa, lean steak I usually go for a New York strip with all fats cut off so just meat I find that my local health food store (spouts) has a great selection for the lean meats with a great price! about $4.29 for a huge piece, I was cooking for 2 so I got two steaks the second one was bigger about $5.50.... long story short I had some left overs of steak and quinoa. I thought what can i do with these extra pieces without being wasteful the light bulb light up and I though SOUP! As you can tell by now I love soup so I figured that i can make something up.
Ingredients:
Raw or already grilled New York Steak cut into cubes
Cubed onion
Baby corrots
Celery
2 large cloves of garlic
Green onion
Potato (optional)
cayanne pepper(optional)
1 cube of beef stock
Half of cup of quinoa
Directons:
An hour on medium heat
Throw it all in the pot EXCEPT THE QUINOA
until the last 20 minutes!

EASY CHICKEN POSOLE
Okay everyone so lately in San Diego its been pretty cold. Personally I hate being cold. So around these times I stick it out and make soup. Being a Mexican I love all my grandma's recipes and this one is so yummy and flavorful, and I do say so myself very very easy. Its almost effortless!
Lets get started :)
What you'll need: (serves 4)
Chicken 4-5 legs or thighs
1/2 Large onion
4 Large cloves of garlic
1 Can of homany
1 Can Las Palmas Chile Colorado
1 1/2 tables spoons of chicken bouillon
Salt to taste
Garnish:
Cilantro
Onion
Cabbage
Raddish
Lemon or Lime
1. Rinse chicken and add to a medium pot of water add onion and garlic, whole.
Let boil for about 45 minutes.
2. Add in HALF of the can of the Las Palmas Chile Colorado and the chicken bouillon. Taste it to see if you could use it more spicy if so then add more of the Las Palmas
If you think you need some more flavor add in more of the chicken bouillon and some salt.
3. Completley drain out all of the juice from the can of homany in a strainer and rise them. When completely rised and drained add to the soup. Cover and let boil on medium for about 30 minutes.
4. Start chopping up garnishes and put to the side.
After 30 minutes your soup is done.
Serve like this
And eat like this

DIY: Make up remover!
Okay ladies when I seen this wonderful concoction from a fellow blogger and personal friend Jaclyn I thought amazing and I must try. I think the #1 reason why I loved this so much is because its all baby products and since I have sensitive skin I thought this would be perfect for me!
- Oh yeah may I add that you get so much for you $$$ and I'm down for that! Anyways lets get to it.....
P.S I doubled my recipe to fill the whole mason jar!
What you'll need:
1 Mason jar
or some sort of container
2 Cups of warm water
2 TBS of tear free baby shampoo
1/2 TSP of baby oil or coconut oil, tea tree oil, olive oil.... etc
Place warm water into mason jar,and combine ingredients, stir in baby shampoo not until it gets bubbly but just enough so that you can see it fully mixed in, stir in oil and DONE
Lets see how it works:
Yup took off my MAC eye shadow and mascara in one swipe, I also love that this does not make your eyes greasy.. pretty much im in love & I will never buy make up remover again <3

Quick & Easy Shrimp Ceviche
This Ceviche is by far the easiest thing and with a major taste factor, its sure to please for a party or just for a quick lunch! & hello Its HEALTHY!! I made my recipe with cooked shrimp but you can also use raw.
Prep time: 20 minutes
Ready in: 2 hours(with cooked shrimp)
Raw shrimp 4-5 hours preferably over night
Ingredients:
1-2 pounds of shrimp
1chopped sweet onion
1 large chopped cucumber
3 chopped roma tomatos
6 lemons
4 limes
1 chopped raw jalapeno pepper
1 chopped serrano pepper
1sliced avocado (optional)
Salt to taste
Tostada shells
First rinse shrimp under cold water if frozen blanch under luke warm water. Make sure to have a large mixing bowl chop and place shrimp in the bowl throw all other ingredients in bowl followed by lemon and lime juice. Avocado can be cubed and thrown into the mixture or it can be sliced and placed on top while serving. Let mixture marinate for 1-2 hours with the cooked, If using raw shrimp it will cook in the lemon and lime juice and will need to take more time aprox 4-5 hours.
Serve with tostada shells on top or on the side, extra limes and a nice cold beer (optional) :)
